Ammonium alginate is a chemical with the molecular formula C6H7O6NH4. Alginic acid, also known as alginate or alginate, is an anionic polysaccharide in widely distributed cell walls of brown algae, which by combining with water form a viscous gel. It is also a significant component of biofilms produced by the bacterium Pseudomonas aeruginosa, the major pathogen in cystic fibrosis, conferring its high resistance to antibiotics and killing by macrophages. Its color ranges from white to tan. It is sold in filament, granular or powder form. It is used as a gum base agent, thickener, stabilizer and emulsifier.

2Function & Application

 

It is white to light yellow fibrous or granular powder, almost odorless and tasteless, soluble in water and forms sticky solution while insoluble in ethanol, water with ethanol content more than 30%, and acid solutions with PH value less than 3. It can be used as emulsifier and softener in gum-based candies.

As well as thickener, stabilizer, pigment diluent and gelling agent. It is also used in dressing, jam, jelly, grease, gelatin pudding and sweet sauce, etc.
