Application
In food
industry, it is used as emulsifier, quality improver, chelating agent. It can
be applied as fresh preserver, water conservation, and quality improver for
quick-frozen aquatic products. Complex used with other phosphates in meat
processing will get a better effect. Also it can improve the expansibility of
ice cream, and the taste of flour and cake, prevent the cheese ageing.
